Warm Pork and Potato Salad with Beetroot

What you'll need.

For the pork and potatoes

  • 300 g (⅔ lb) pork
  • Potatoes, cut into fries
  • Salt
  • Pepper and garlic mix
  • Paprika
  • Oil for frying

For the salad

  • Cabbage, shredded
  • 1 carrot, grated
  • 1 red onion
  • Raw beetroot, grated
  • Fresh dill
  • 1 tablespoon mayonnaise
  • 1 tablespoon sour cream
  • Salt and pepper

How to make it.

  1. Cut the pork into small pieces, season with salt and pepper, and fry in a little oil until golden.
  2. Slice the potatoes into fries, season with salt, the pepper and garlic mix and paprika, and cook in the air fryer for 15 minutes at 180°C (350°F), turning halfway.
  3. Meanwhile, shred the cabbage, grate the carrot and beetroot, and chop the red onion and dill.
  4. Add the warm pork and potatoes to the vegetables.
  5. Dress with the mayonnaise and sour cream, season with salt and pepper, and mix well. Serve right away.

My tips.

Serve while the pork and fries are still warm, the contrast with the crisp vegetables is what makes this salad special. Chicken or turkey fillet works just as well if you want a lighter version.

Can I make it ahead?
Prepare the vegetable base ahead, but add the warm meat, potatoes and dressing just before serving.

Can I use cooked beetroot?
Yes, though raw grated beetroot keeps more crunch and vitamins.
