Vietnamese Rice Paper Rolls in the Air Fryer

Crispy Vietnamese-style rolls filled with minced meat, cabbage, carrot and onion, wrapped in rice paper and air fried until golden. Dipped in sweet chili sauce, they taste like takeaway but are lighter and budget-friendly. A fun dish the whole family will love.
What you'll need.
- Rice paper sheets
- 450 g (1 lb) minced meat
- Cabbage, shaved with a peeler
- 1 carrot, grated
- 1 onion
- 2 tablespoons soy sauce
- Freshly ground pepper
- Dried garlic
- Sweet chili sauce, to serve
How to make it.
- Shave the cabbage with a peeler and grate the carrot. Chop the onion.
- Mix the minced meat with the vegetables, soy sauce, pepper and dried garlic.
- Briefly soak each rice paper sheet in water and cut it into 2 pieces.
- Place a spoonful of filling on each piece and roll it up tightly, tucking in the sides.
- Air fry for 15 minutes at 180°C (350°F) until crisp and golden. Serve with sweet chili sauce.
My tips.
Do not oversoak the rice paper: a few seconds is enough, it keeps softening as you roll. Brush or spray the rolls with a little oil before cooking for the crispiest shell.

Can I make them ahead?
Roll them a few hours in advance and keep covered in the fridge, then air fry before serving.
What meat works best?
Pork, beef, chicken or turkey mince all work, choose what your family likes.
Can I add more vegetables?
Yes, mushrooms, bell pepper or glass noodles make lovely additions.
