Tuna, Bean & Corn Salad Toast

Inspired by the famous tuna salad trend, this is a quick, protein-packed mix of canned tuna, beans and sweetcorn, brightened with apple, pickles and a little jalapeno heat. Piled onto crisp fried whole grain bread, it makes a satisfying snack or light lunch in minutes. Fresh, crunchy and full of flavour.
What you'll need.
- 100 g sweetcorn
- 1 can of tuna, drained
- 1 can of beans, drained
- 1 apple, diced
- ½ red onion, chopped
- 2 pickled cucumbers, sliced
- Jalapeno, sliced, to taste
- Salt and pepper, to taste
- Mayonnaise, to taste
- Wasabi, to taste
- Oil for frying
- Whole grain bread, to serve
How to make it.
- In a bowl, combine the corn, tuna, beans, diced apple, red onion, pickled cucumbers and jalapeno.
- Season with salt and pepper, then stir in mayonnaise and a little wasabi to taste.
- Heat oil in a pan and fry the whole grain bread until crisp and golden.
- Spread the tuna and bean mixture generously over the toasted bread and serve.
My tips.
Drain the tuna and beans well so the salad stays thick. Start with a little wasabi and add more to taste, it adds a gentle kick without overpowering.

Mix the salad ahead and keep it chilled; fry the bread just before serving so it stays crisp.
Can I skip the wasabi?
Yes, a little mustard or extra pickle gives a similar tang.
