Tomato and Cheese Air Fryer Chicken Boats

Tender chicken breasts sit in little foil boats with red onion, tomato and a bubbling layer of cheese. Soy, garlic and herbs build plenty of flavour, while the air fryer keeps the meat juicy and the kitchen calm, making this a lovely family dinner.

What you'll need.

For the chicken

  • 2 large chicken breasts (about 700 g)
  • 3 tbsp soy sauce
  • 1 tbsp sugar
  • 3 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper, to taste

For the topping

  • 1 red onion, thinly sliced
  • 1 large tomato, sliced
  • 120 g cheese, grated

How to make it.

  1. Cut shallow slits across the chicken breasts without slicing all the way through.
  2. Mix the soy sauce, sugar, garlic, olive oil, rosemary, oregano, salt and pepper. Coat the chicken and marinate for 15 minutes.
  3. Shape two sturdy boats from foil and divide the sliced red onion between them.
  4. Place the chicken on the onion, then top with tomato slices and grated cheese.
  5. Air fry at 180°C (350°F) for 20 minutes, until the chicken is cooked through and the cheese is golden.

My tips.

Make evenly spaced shallow cuts so the marinade and cheese season the chicken without weakening it. For a Mediterranean variation, add a few sliced olives under the cheese.

Can I marinate the chicken overnight?
Yes. Cover and refrigerate it for up to 12 hours for an even deeper flavour.

Can I cook without foil?
You can use small air-fryer-safe dishes, which will also hold the juices and toppings neatly.

What goes well with the chicken boats?
Serve them with rice, couscous, or steamed green vegetables.
