Soy Barbecue Oven Chicken Quarters

Chicken leg quarters are deeply scored and coated with soy, barbecue sauce, lemon, garlic, curry and smoked paprika before roasting. The cuts help the bold marinade reach the thick meat, while the long oven cooking creates juicy chicken with a dark, savoury glaze.

What you'll need.

  • 2 chicken leg quarters
  • 3 tbsp soy sauce
  • 1 tbsp barbecue sauce
  • 1 tbsp lemon juice
  • 2 garlic cloves, minced
  • 1 tsp curry powder
  • ½ tsp dried garlic
  • 1 tsp smoked paprika

How to make it.

  1. Pat the chicken dry and make several deep cuts in the thickest parts.
  2. Mix the soy sauce, barbecue sauce, lemon juice, garlic, curry, dried garlic and smoked paprika.
  3. Rub the marinade over the chicken and into every cut.
  4. Arrange the quarters in a roasting dish and let them stand while the oven heats.
  5. Bake at 180°C (350°F) for 45 to 55 minutes, until browned and fully cooked.

My tips.

Work the marinade into the cuts so the thick quarters season evenly. For a sweeter glaze, add a teaspoon of honey to the sauce.

Yes. Refrigerate it covered for up to 24 hours.

Can I use separate thighs and drumsticks?
Yes. Begin checking smaller pieces earlier.
