Sesame Shrimp Vegetable Stir-Fry

Shrimp are coated with sesame oil, paprika, pepper and starch, then quickly stir-fried with bell pepper, red onion, white onion, ginger and garlic. Soy and oyster sauces make a glossy savoury coating, while sesame seeds add crunch to this fast dinner.
What you'll need.
- 500 g peeled shrimp
- Freshly ground black pepper, to taste
- 1 tsp paprika
- 1 tbsp sesame oil
- 1 tbsp cornstarch
- 1 bell pepper, chopped
- 1 red onion, chopped
- 1 white onion, chopped
- 20 g fresh ginger, sliced
- 3 garlic cloves, chopped
- 1 tbsp cooking oil
- 1 tsp sugar
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 30 ml water
- 1 tbsp sesame seeds
How to make it.
- Toss the shrimp with pepper, paprika, sesame oil and cornstarch.
- Heat cooking oil and stir-fry the bell pepper, onions, ginger and garlic for 5 to 7 minutes.
- Add the sugar, soy sauce, oyster sauce and water and bring to a simmer.
- Add the shrimp and stir-fry for 2 to 3 minutes, until pink and just cooked.
- Finish with sesame seeds and serve immediately.
My tips.
Pat the shrimp dry before coating so they sear instead of steaming. For extra vegetables, add broccoli or snap peas with the peppers.

Can I use frozen shrimp?
Yes. Thaw them completely and dry them well.
Can I prepare the sauce ahead?
Yes. Mix it up to two days in advance.
What should I serve with the stir-fry?
Steamed rice or noodles are both excellent.
