Sesame Chicken Bites with Cucumber Salad

Golden chicken bites coated in sesame seeds, cooked in the air fryer until crisp outside and juicy inside, served with a quick garlicky cucumber salad. Ginger and sesame oil give them a lovely Asian note. A light, protein-packed dinner ready in about half an hour.
What you'll need.
For the chicken
- 2 chicken fillets
- ½ red onion
- Fresh ginger, sliced
- 2 tablespoons sesame oil
- Your favourite chicken seasoning
- Salt
- 1 egg
- 1 tablespoon potato starch
- Garlic
- Sesame seeds
For the cucumber salad
- Cucumbers
- 2 garlic cloves
- 1 teaspoon salt
- Fresh dill
- Green onion
How to make it.
- Cut the chicken fillets into bite-sized pieces and mix with the chopped red onion, ginger, sesame oil, seasoning and salt.
- Add the egg, potato starch and garlic, and mix until every piece is coated. Sprinkle generously with sesame seeds.
- Air fry for 15 minutes at 180°C (350°F) until golden and cooked through.
- Meanwhile, slice the cucumbers and shake them in a container with the garlic, salt and dill. Chill for 10 minutes.
- Serve the chicken hot, topped with green onion, with the cucumber salad on the side.
My tips.
Potato starch is the secret to a light, crispy coating, so do not swap it for flour. Smashing the cucumbers lightly before seasoning helps them soak up the garlicky dressing faster.

Marinate the chicken up to a day ahead, then coat and cook it fresh.
