Saucy Air Fryer Cauliflower

Golden cauliflower with crisp edges becomes wonderfully satisfying when coated in a sweet, tangy ketchup, soy and honey glaze. Eggs give the florets a tender coating, while the air fryer keeps the method simple, quick and wonderfully tidy for an easy meatless meal.
What you'll need.
For the cauliflower
- 1 medium cauliflower, cut into small florets
- 4 eggs
- 2 tbsp flour
- Salt and freshly ground black pepper, to taste
For the sauce
- 2 tbsp ketchup
- 1 tbsp soy sauce
- 1 tsp honey
- 1 tsp mustard
- 1 tbsp olive oil
How to make it.
- Preheat the air fryer to 180°C (350°F). Cut the cauliflower into evenly sized florets.
- Beat the eggs with salt and pepper, then stir in the flour until smooth. Toss the cauliflower in the mixture until well coated.
- Arrange the florets in the basket in one layer and air fry for 12 minutes, turning once.
- Stir together the ketchup, soy sauce, honey, mustard and olive oil.
- Toss the hot cauliflower with the sauce, return it to the basket, and air fry for 5 minutes more until glossy and lightly caramelized.
My tips.
Keep the florets similar in size and avoid crowding the basket so the coating can brown evenly. For a spicier variation, add a pinch of chilli flakes or a little hot sauce to the glaze.

Can I prepare the cauliflower ahead?
You can cut the florets and mix the sauce a day ahead, but coat and cook the cauliflower just before serving.
Can I replace the honey?
Yes. Maple syrup or brown sugar will give the glaze a similar gentle sweetness.

Serve it with rice, a crisp salad, or warm flatbread for a simple meatless meal.
