Minced Meat Roll with Cheese and Ham

What you'll need.

For the meat layer

  • 450 g (1 lb) minced meat
  • 1 egg
  • 40 g (1½ oz) breadcrumbs
  • Grated parmesan
  • Fresh parsley
  • Dried garlic
  • Salt and pepper

For the filling

  • Sliced cheese
  • Sliced ham

How to make it.

  1. Mix the minced meat with the egg, breadcrumbs, parmesan, chopped parsley, dried garlic, salt and pepper.
  2. Spread the mixture into an even layer on a sheet of parchment paper.
  3. Lay the cheese and ham over the meat, then use the parchment to roll everything into a tight roll.
  4. Refrigerate the roll for 2 hours so it holds its shape.
  5. Cut into thick slices and bake for 20 minutes at 180°C (350°F) until golden and cooked through.

My tips.

Chilling is the secret: a well-rested roll slices cleanly and does not fall apart in the oven. Try mozzarella for a stretchy centre, or smoked ham for a deeper flavour.

Can I prepare it in advance?
Yes, assemble the roll a day ahead and keep it wrapped in the fridge until baking.

What meat should I use?
A beef and pork mix is juiciest, but pure beef or turkey also work well.

How do I store leftovers?
Keep slices in the fridge for up to 3 days, they are delicious cold or gently reheated.
