Lemon Butter Fried Radishes

Radishes become mellow and lightly sweet when fried in butter with garlic, lemon zest, a touch of sugar and fresh lemon juice. This quick side keeps a gentle bite while losing the sharp raw edge, making it a bright alternative to potatoes. Serve it warm.
What you'll need.
- 500 g radishes, halved
- 2 garlic cloves, chopped
- 1 tbsp butter
- Salt and freshly ground black pepper, to taste
- 1 tsp lemon zest
- 1 tsp sugar
- Juice of ½ lemon
How to make it.
- Wash, trim and halve the radishes.
- Melt the butter in a wide pan and add the garlic.
- Add the radishes and fry until they begin to colour.
- Season with salt, pepper, lemon zest and sugar.
- Add the lemon juice and cook for 5 minutes more, until tender but still slightly crisp.
My tips.
Keep the radishes in one layer so their cut sides caramelize. For extra freshness, finish with chopped parsley or dill.
Good to know.
