Honey Lime Oven Chicken Thighs and Drumsticks

Chicken thighs and drumsticks roast in a glossy marinade of soy, Worcestershire, mustard, honey, garlic, olive oil, lime and herbs. Marjoram and tarragon bring gentle fragrance while the long oven cooking creates juicy meat with a deeply coloured savoury-sweet exterior.

What you'll need.

  • 1.5 kg chicken thighs and drumsticks
  • 3 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp mustard
  • 1 tbsp honey
  • Freshly ground black pepper, to taste
  • 1 tsp dried marjoram
  • ½ tsp dried tarragon
  • Juice of 1 lime

How to make it.

  1. Pat the chicken dry and arrange it in a roasting dish.
  2. Mix the soy sauce, Worcestershire sauce, garlic, olive oil, mustard, honey, pepper, marjoram, tarragon and lime juice.
  3. Coat every piece of chicken thoroughly with the marinade.
  4. Let the chicken stand while the oven heats to 180°C (350°F).
  5. Bake for 1 hour, turning once, until deeply browned and fully cooked.

My tips.

Leave a little space between the chicken pieces so they roast evenly. For a darker glaze, brush with the pan juices near the end.

Good to know.

Can I marinate the chicken overnight?
Yes. Refrigerate it covered for up to 24 hours.

Can I use only drumsticks?
Yes. Similar-size pieces will cook most evenly.

What should I serve with it?
Rice, roasted potatoes or a fresh salad are good choices.
