Homemade Air Fryer Turkey Shawarma Wraps

Seasoned turkey is rolled thinly in parchment and air fried into tender shawarma-style slices, then tucked into tortillas with crisp vegetables and spicy yogurt. It is a clever homemade method with fresh flavour in every bite. It is easy to customize.

What you'll need.

For the turkey

  • 450 g ground turkey
  • 1 tbsp mayonnaise
  • 1 tbsp sour cream
  • 1 tsp meat seasoning
  • ½ tsp dried garlic
  • Salt and freshly ground black pepper, to taste

For the wraps

  • 4 tortillas or thin flatbreads
  • 1 tomato, sliced
  • 1 small onion, sliced
  • 1 cucumber, sliced
  • 4 lettuce leaves
  • 2 tbsp yogurt
  • 1 tbsp sriracha

How to make it.

  1. Mix the ground turkey with mayonnaise, sour cream, meat seasoning, dried garlic, salt and pepper.
  2. Spread it in a thin rectangle between two sheets of parchment, remove the top sheet, and roll the bottom parchment into a firm log.
  3. Air fry the wrapped roll at 185°C (370°F) for 20 minutes, then unwrap carefully and slice.
  4. Mix the yogurt and sriracha and spread it over the tortillas.
  5. Add turkey, tomato, lettuce, onion and cucumber, then roll the wraps tightly.

My tips.

Spread the turkey in an even thin layer before rolling so the centre cooks through at the same pace. For a milder variation, replace the sriracha with garlic yogurt.

Can I prepare the turkey roll ahead?
Yes. Shape it and refrigerate for several hours before air frying.

Can I use ground chicken?
Yes. Ground chicken works with the same seasonings and method.

What else can I add to the wraps?
Pickled cabbage, herbs, or sliced peppers are all delicious additions.
