High-Protein Breakfast Bake on Lavash

What you'll need.

  • Lavash or pita bread
  • 4 eggs
  • 1 red onion
  • 1 tomato
  • Canned corn
  • Fresh parsley
  • Cottage or cream cheese
  • Gouda cheese, grated
  • Salt and pepper

How to make it.

  1. Line the air fryer dish with lavash so it forms a base with raised edges.
  2. Whisk the eggs with salt and pepper and pour them over the lavash.
  3. Scatter over the chopped red onion, sliced tomato, corn and parsley.
  4. Add spoonfuls of cottage or cream cheese and top with grated gouda.
  5. Air fry for 12 minutes at 180°C (350°F) until set and golden. Slice and serve warm.

My tips.

Press the lavash gently into the corners of the dish so the egg does not leak underneath. Any vegetables you have on hand work here, mushrooms and spinach are lovely additions.

Can I make it ahead?
It is best fresh and crisp, but leftovers reheat well in the air fryer for a few minutes.

Can I use tortilla instead of lavash?
Yes, a large tortilla works exactly the same way.

Is it really high in protein?
Yes, four eggs and two cheeses give each portion a generous protein boost.
