High-Protein Air Fryer Egg Tortilla

Eggs, colourful vegetables and melted cheese bake together on a tortilla for a warm breakfast that feels generous yet takes less than twenty minutes. It is protein-rich, bright and easy to slice, perfect for a relaxed morning or a quick light lunch.
What you'll need.
- 1 large tortilla
- 4 large eggs
- 1 small red onion, finely chopped
- 1 tomato, diced
- 1 bell pepper, diced
- 2 tbsp parsley, chopped
- 100 g cheese, grated
- Salt and freshly ground black pepper, to taste
How to make it.
- Press the tortilla into a shallow air-fryer-safe dish or lined basket, lifting the edges slightly.
- Crack the eggs onto the tortilla and season with salt and pepper.
- Scatter over the red onion, tomato, bell pepper and parsley.
- Finish with the grated cheese.
- Air fry at 180°C (350°F) for 8 minutes, until the eggs are set to your liking and the cheese has melted.
My tips.
Use a dish that holds the tortilla edges upright so the egg cannot run underneath. For a heartier variation, add diced cooked chicken, turkey, or a spoonful of cottage cheese.

Yes. Refrigerate them in a covered container overnight and assemble the tortilla in the morning.
