High-Protein Air Fryer Egg Tortilla

What you'll need.

  • 1 large tortilla
  • 4 large eggs
  • 1 small red onion, finely chopped
  • 1 tomato, diced
  • 1 bell pepper, diced
  • 2 tbsp parsley, chopped
  • 100 g cheese, grated
  • Salt and freshly ground black pepper, to taste

How to make it.

  1. Press the tortilla into a shallow air-fryer-safe dish or lined basket, lifting the edges slightly.
  2. Crack the eggs onto the tortilla and season with salt and pepper.
  3. Scatter over the red onion, tomato, bell pepper and parsley.
  4. Finish with the grated cheese.
  5. Air fry at 180°C (350°F) for 8 minutes, until the eggs are set to your liking and the cheese has melted.

My tips.

Use a dish that holds the tortilla edges upright so the egg cannot run underneath. For a heartier variation, add diced cooked chicken, turkey, or a spoonful of cottage cheese.

Good to know.

Can I chop the vegetables ahead?
Yes. Refrigerate them in a covered container overnight and assemble the tortilla in the morning.

Can I use egg whites?
Yes. Replace two whole eggs with four egg whites for a lighter, higher-protein version.

What can I serve with it?
Add avocado, a spoonful of Greek yogurt, or a simple green salad.
