What you'll need.

  • 2 avocados
  • Zest of 1 lemon
  • Lemon juice
  • 1 tbsp sesame seeds
  • Chilli flakes, to taste
  • Salt, to taste
  • Bread
  • Oil for frying

How to make it.

  1. Heat oil in a pan and fry the bread until crisp and golden.
  2. Slice the avocado and arrange it over the toast.
  3. Season with lemon zest, lemon juice and salt.
  4. Sprinkle with sesame seeds and chilli flakes and serve.

My tips.

Use perfectly ripe avocado and season generously. A squeeze of lemon keeps it fresh and stops it browning.

Best fresh; fry the bread and slice the avocado just before serving.

Can I add egg?
A poached or fried egg on top makes it a fuller meal.
