Golden Pan-Fried Avocado with Lemon Maple Sauce

Firm avocado wedges are lightly floured and pan-fried until crisp and golden, then coated in a bright lemon and maple sauce with a gentle chili warmth. Creamy centers and glossy sweet-tart edges make an easy vegetarian appetizer that feels fresh, comforting and a little unexpected.
What you'll need.
- 2 firm-ripe avocados
- Salt and black pepper, to taste
- 3 tbsp lemon juice
- 1 tbsp maple syrup
- ¼ tsp chili flakes
- 1 tsp cornstarch
- 2 tbsp water
- 3 tbsp all-purpose flour
- 2 tbsp cooking oil
How to make it.
- Halve the avocados, remove the pits and peel them. Cut each half into thick wedges and season with salt and pepper.
- Whisk the lemon juice, maple syrup, chili flakes, cornstarch and water until smooth.
- Coat the avocado wedges lightly in flour and shake off the excess.
- Heat the oil in a wide pan and fry the avocado for 1 to 2 minutes per side, until golden and crisp.
- Pour in the lemon mixture and cook for 2 to 3 minutes, turning gently, until the sauce thickens and coats the wedges.
My tips.
Choose avocados that yield only slightly to pressure so the wedges stay intact. Turn them with a thin spatula and keep the final simmer brief to preserve the creamy center.
Good to know.
How ripe should the avocados be?
Use firm-ripe fruit that gives slightly but does not feel soft.
Can I replace maple syrup?
Yes. Mild honey or agave syrup works well.
How should I serve fried avocado?
Serve it immediately as an appetizer, taco filling or salad topping.
