Glazed Air Fryer Chicken with Greek-Style Salad

Sticky glazed chicken and a crisp Greek-style salad make a colourful dinner with plenty of contrast. The boneless drumstick meat stays juicy in the air fryer, while cucumber, tomatoes, olives and feta bring freshness, making this a complete meal in forty minutes.
What you'll need.
For the chicken
- 5 chicken drumsticks, meat removed from the bones
- 1 tsp paprika
- 1 tsp chicken seasoning
- Salt and freshly ground black pepper, to taste
- 1 tbsp olive oil
For the glaze
- 3 tbsp soy sauce
- 1 tsp mustard
- 1 tsp ketchup
- 1 tsp honey
- Juice of ½ lime
For the salad
- 250 g cherry tomatoes, halved
- 2 cucumbers, sliced
- ½ red onion, thinly sliced
- 80 g olives, sliced
- 120 g feta, crumbled
- 1 tbsp olive oil
- Juice of ½ lime
- 1 tbsp Worcestershire sauce
- Salt and freshly ground black pepper, to taste
How to make it.
- Season the boneless chicken with salt, pepper, paprika, chicken seasoning and olive oil.
- Air fry at 180°C (350°F) for 10 minutes.
- Stir together the soy sauce, mustard, ketchup, honey and lime juice, then coat the chicken with the glaze.
- Return the chicken to the air fryer for 10 minutes more, turning once, until cooked through and glossy.
- Combine the tomatoes, cucumbers, red onion, olives and feta, then dress with olive oil, lime juice, Worcestershire sauce, salt and pepper and serve with the chicken.
My tips.
Remove the drumstick bones carefully and keep the pieces similar in thickness so they finish together. For a lighter variation, use skinless chicken breast strips and begin checking them a few minutes earlier.

Can I prepare the salad ahead?
Chop the vegetables several hours ahead, but add the feta and dressing just before serving.
Can I use boneless chicken thighs?
Yes. They are an easy substitute and will stay especially juicy in the air fryer.
Is this a complete meal?
Yes. The chicken, vegetables and feta are satisfying together, although warm pita is a lovely addition.
