Eggs Wrapped in Minced Meat

Juicy meat cutlets with a whole boiled egg hidden inside, rolled in crispy breadcrumbs and cooked in the air fryer. Sliced open, they look wonderful on the plate. A hearty family dish, a bit like a Scotch egg, but lighter and made from simple everyday ingredients.
What you'll need.
- 450 g (1 lb) minced meat
- Boiled eggs, peeled
- Fresh parsley
- Dried garlic and paprika
- Salt and pepper
- 1 raw egg, for coating
- Flour and breadcrumbs
How to make it.
- Season the minced meat with salt, pepper, dried garlic and paprika, add the chopped parsley and mix well.
- Peel the boiled eggs and wrap each one in an even layer of the meat mixture.
- Roll each cutlet in flour, dip in the beaten egg, then coat in breadcrumbs.
- Air fry for 15 minutes at 180°C (350°F) until golden and cooked through.
My tips.
Wet your hands when wrapping the eggs, the meat will smooth around them without cracks. Boil the eggs slightly soft if you like a creamy yolk, they firm up a little during air frying.

Can I make them ahead?
Yes, assemble and coat them a day in advance and cook just before dinner.
What meat works best?
A beef and pork mix is juiciest, but turkey or chicken mince makes a lighter version.
How do I serve them?
Slice in half to show the egg, with mashed potatoes or a green salad on the side.
