Crispy Air Fryer Tuna Melt with Pickle and Lemon

Creamy tuna, sharp mustard, lemon and crunchy pickle are piled onto whole-grain bread, finished with melting cheese and crisped in the air fryer. This quick open-faced sandwich feels comforting but fresh, with bright flavor, satisfying protein and almost no cleanup.
What you'll need.
- 1 can tuna in water, about 150 g drained
- 2 tbsp chopped chives
- 1 small shallot, finely chopped
- 1 medium pickled cucumber, finely chopped
- 1 tsp pickle brine
- 1 tsp finely grated lemon zest
- 1 tbsp lemon juice
- 1 tsp mayonnaise
- 1 tsp Dijon mustard
- Freshly ground black pepper, to taste
- 4 slices whole-grain bread
- 80 g cheddar or Gouda, grated
How to make it.
- Drain the tuna thoroughly and place it in a bowl.
- Add the chives, shallot, pickle, brine, lemon zest, lemon juice, mayonnaise, mustard and black pepper. Mix until evenly combined.
- Divide the tuna mixture among the bread slices and spread it to the edges.
- Top evenly with the grated cheese.
- Air fry at 180°C (350°F) for 4 minutes, until the cheese melts and the bread is crisp. Serve immediately.

Drain the tuna very well so the bread stays crisp. Grate the cheese finely for quick, even melting.
