Crispy Air Fryer Chicken Drumsticks

These chicken drumsticks get a lightly crisp, golden coating from egg and starch, with paprika, garlic and turmeric adding colour and warmth. A creamy mustard and ketchup dip makes them especially comforting, while the air fryer keeps dinner easy.
What you'll need.
For the chicken
- 4 chicken drumsticks
- 1 large egg
- 2 tbsp cornstarch
- 1 tsp paprika
- ½ tsp dried garlic
- ½ tsp turmeric
- Salt and freshly ground black pepper, to taste
For the dip
- 2 tbsp sour cream
- 1 tbsp mayonnaise
- 1 tsp ketchup
- 1 tsp mustard
How to make it.
- Pat the chicken drumsticks dry and season with salt, pepper, dried garlic, paprika and turmeric.
- Add the egg and cornstarch, then mix until every drumstick has a thin, even coating.
- Arrange the chicken in one layer in the air fryer basket.
- Air fry at 180°C (350°F) for 20 minutes, turning halfway, until golden and cooked through.
- Stir together the sour cream, mayonnaise, ketchup and mustard, then serve the dip with the hot drumsticks.
My tips.
Pat the chicken very dry before adding the coating so it adheres and browns evenly. For a spicier variation, add cayenne pepper to the seasoning or hot sauce to the dip.

Can I season the chicken ahead?
Yes. Add the dry seasonings several hours ahead, but mix in the egg and starch just before cooking.
Can I use chicken thighs?
Yes. Bone-in thighs work well, although thicker pieces may need a few extra minutes.
