Crab Stick Salad with Cucumber

A creamy, satisfying salad of crab sticks, crunchy cucumber, boiled eggs and cheese, tossed with dill, garlic and a light mustard dressing. It takes minutes to stir together, looks lovely on the table and works as a quick lunch or a fresh side for family dinners.
What you'll need.
- Crab sticks (surimi), 1 pack
- 3 cucumbers
- 2 boiled eggs
- Hard cheese, grated
- Fresh dill
- 2 garlic cloves
- 1 teaspoon mustard
- 1 tablespoon mayonnaise
- 1 tablespoon sour cream
- Freshly ground pepper
How to make it.
- Cut the crab sticks into small pieces and slice the cucumbers and boiled eggs.
- Grate the cheese and chop the dill, then add everything to a large bowl.
- In a small cup, mix the minced garlic, mustard, mayonnaise, sour cream and freshly ground pepper.
- Pour the dressing over the salad and mix well. Chill briefly before serving if you have time.
My tips.
Half mayonnaise and half sour cream keeps the dressing creamy but light. If the cucumbers are very watery, salt them lightly and drain for a few minutes so the salad does not thin out.

Can I make it ahead?
Yes, it keeps well for a day in the fridge, just stir before serving.
Can I replace the crab sticks?
Canned tuna or cooked shrimp both work nicely in this salad.
Is it healthy?
It is fairly light, and you can use only sour cream or yoghurt in the dressing to lighten it further.
