Cottage Cheese Syrniki in the Air Fryer

Golden cottage cheese pancakes, or syrniki, made lighter in the air fryer with barely any oil. They come out crisp outside and creamy inside, lovely with sour cream and fresh berries. A comforting breakfast classic that is high in protein and easy on the waistline.

What you'll need.

  • 450 g (1 lb) cottage cheese
  • 2 egg yolks
  • 1 tablespoon sugar
  • 3 tablespoons flour
  • A little vegetable oil
  • Sour cream and berries, to serve

How to make it.

  1. Mix the cottage cheese with the egg yolks and sugar until smooth.
  2. Add the flour and mix into a soft dough.
  3. Form small round cheesecakes with your hands, flouring them lightly if the dough sticks.
  4. Brush with a little vegetable oil and air fry for 15 minutes at 180°C (350°F) until golden.
  5. Serve warm with sour cream and berries.

My tips.

Use dry, well-pressed cottage cheese, a wet one will need extra flour and make the syrniki heavy. Turn them halfway through cooking for an even golden colour on both sides.

Good to know.

Can I make them ahead?
Yes, shape them the night before and keep in the fridge, then cook fresh in the morning.

Can I skip the sugar?
Yes, leave it out for a savoury version and serve with herbs and sour cream.

Are they healthy?
Very much so: cottage cheese makes them rich in protein and calcium, and the air fryer keeps the fat low.
