Chicken Cutlets with Garlic Beans

Tender chopped chicken cutlets, cheesy and golden, served with quick garlic butter green beans. Everything is made in one pan, ready in well under an hour and packed with protein. A simple, satisfying dinner that feels a little special without any fuss.
What you'll need.
For the cutlets
- 3 chicken fillets, cut into small cubes
- 3 eggs
- 2 garlic cloves, minced
- 1 tbsp mayonnaise
- 3 tbsp flour
- Cheese, grated
- Fresh parsley, chopped
- Salt, pepper and cumin, to taste
- Oil for frying
For the beans
- Green beans
- 30 g butter
- 3 garlic cloves
- Salt and freshly ground pepper, to taste
How to make it.
- Mix the chopped chicken with the eggs, garlic, mayonnaise, flour, grated cheese, parsley, salt, pepper and cumin.
- Heat oil in a pan and fry spoonfuls of the mixture as cutlets, 5-7 minutes on each side, until golden.
- Bring a pot of salted water to the boil and cook the green beans for 5-7 minutes, then drain.
- Melt the butter in a pan with the garlic and a little pepper, add the beans and fry for 5-7 minutes.
- Serve the chicken cutlets with the garlic beans.

Chopping the chicken by hand rather than mincing keeps the cutlets juicy with a nice bite. Do not overcrowd the pan so they brown evenly.
