Chicken and Zucchini Air Fryer Fritters

Grated chicken, zucchini and potato come together in tender little fritters with a golden Parmesan edge. The air fryer cooks them with very little oil, making this a clever, comforting meal for using simple ingredients and adding more vegetables to the table.
What you'll need.
- 400 g frozen chicken breast, firm enough to grate
- 1 medium zucchini, grated
- 2 medium potatoes, grated
- 2 shallots, finely chopped
- 100 g processed cheese, grated
- 1 large egg
- 2 tbsp Parmesan, grated
- 1 tbsp flour
- Salt and freshly ground black pepper, to taste
- 1 tbsp oil
How to make it.
- Coarsely grate the potatoes and zucchini, squeeze out excess moisture, and place them in a bowl.
- Grate the firm frozen chicken breast and processed cheese, then add them with the chopped shallots.
- Mix in the egg, Parmesan, flour, salt and pepper until the mixture holds together.
- Shape into small flat fritters and brush both sides lightly with oil.
- Air fry at 180°C (350°F) for 15 minutes, turning halfway, until golden and fully cooked.
My tips.
Squeeze the grated vegetables very well so the fritters hold their shape and brown instead of steaming. For a milder variation, replace the processed cheese with mozzarella.

Can I shape the fritters ahead?
Yes. Keep them covered in the refrigerator for up to 6 hours before cooking.
Can I use thawed chicken?
Use very cold, partly frozen chicken because it is safer and much easier to grate evenly.
What should I serve with the fritters?
They are delicious with yogurt sauce, cucumber salad, or steamed green beans.
