Braided Bacon Air Fryer Pork Tenderloin

Pork tenderloin strips and smoked bacon are braided, browned with butter, garlic and rosemary, then finished in the air fryer. A soy, lemon, honey and mustard glaze adds a glossy sweet-savoury finish, making this dramatic main easier than it looks. Serve it warm.
What you'll need.
- 700 g pork tenderloin
- 150 g smoked bacon
- Salt and freshly ground black pepper, to taste
- 1 tsp ground coriander
- ½ tsp dried garlic
- 1 tbsp cooking oil
- 1 tbsp butter
- 2 garlic cloves
- 2 rosemary sprigs
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 1 tbsp lemon juice
- 1 tsp honey
- 1 tsp mustard
How to make it.
- Split the tenderloin lengthwise, pound lightly and cut into three long strips, then season with salt, pepper, coriander and dried garlic.
- Add bacon strips, braid the pork and bacon together, and secure both ends with kitchen twine.
- Brown the braid on both sides in butter with garlic and rosemary.
- Air fry at 165°C (330°F) for 15 minutes.
- Mix the olive oil, soy sauce, lemon juice, honey and mustard, brush over the meat, and air fry at 180°C (350°F) for 3 minutes more.
My tips.
Keep the braid loose enough for hot air to circulate between the strips. Remove every piece of twine before slicing and serving.

Can I braid the pork ahead?
Yes. Cover and refrigerate it for up to one day.
Can I omit the bacon?
Yes, though the pork will be leaner and less smoky.
