Boiled Avocado Toast

A clever twist on avocado toast, where the avocado is briefly boiled to make it extra soft and creamy, then mashed with lemon, Worcestershire and basil. Piled onto garlic-rubbed toast with cucumber, sun-dried tomatoes and a little cream cheese, and finished with sesame. Fresh and moreish.

What you'll need.

  • 1 avocado
  • Lemon juice
  • Worcestershire sauce
  • Fresh basil
  • Salt and pepper, to taste
  • 1 cucumber, sliced
  • Sun-dried tomatoes, sliced
  • 1 tbsp cream cheese
  • Oil from the sun-dried tomatoes
  • Bread
  • 1 garlic clove
  • Sesame seeds

How to make it.

  1. Halve the avocado and simmer it in water with a little lemon juice for 1-2 minutes to soften, then drain.
  2. Mash the avocado with lemon juice, Worcestershire sauce, salt, pepper and basil.
  3. Mix in the cucumber, sun-dried tomatoes, cream cheese and a little of the tomato oil.
  4. Toast the bread and rub it with the garlic clove.
  5. Spread the mixture over the toast and finish with sesame seeds.

My tips.

Boiling the avocado briefly makes it silky, but do not overcook it. Rubbing the toast with raw garlic adds a lovely aroma.

Can I skip boiling the avocado?
Yes, simply mash it raw for a more classic avocado toast.

Can I make it ahead?
The mix is best fresh; toast the bread just before serving.

Is it vegetarian?
Yes; use a vegetarian Worcestershire sauce if needed.
