Bacon-Wrapped Pork Rolls with Prunes

What you'll need.

  • Pork, sliced and pounded thin
  • Salt, pepper, dried garlic and cumin, to taste
  • Cheddar cheese, grated
  • 3 garlic cloves, minced
  • 2 tbsp mayonnaise
  • Prunes, sliced
  • Bacon
  • Oil for frying

How to make it.

  1. Pound the pork slices thin and season with salt, pepper, dried garlic and cumin.
  2. Mix the grated cheddar with the garlic and mayonnaise.
  3. Spread the mixture over the pork, add the sliced prunes and roll up each slice.
  4. Wrap each roll in bacon.
  5. Fry in a little oil until golden brown all over.
  6. Bake for 25 minutes at 180°C (350°F), until cooked through.

My tips.

Pound the pork evenly so the rolls cook at the same rate. Secure the rolls with a toothpick if needed.

Can I make them ahead?
Assemble ahead and chill, then fry and bake when needed.

Can I use dried apricots?
Yes, apricots or dates give a similar sweet note.

What should I serve with them?
Mashed potato or a fresh salad pairs perfectly.
