Bacon-Wrapped Pork Rolls with Prunes

Tender pork escalopes rolled around a savoury filling of cheddar, garlic and sweet prunes, then wrapped in bacon and roasted until golden. The prunes melt into the meat for a lovely sweet-savoury balance. An impressive yet easy dish that feels special enough for guests.
What you'll need.
- Pork, sliced and pounded thin
- Salt, pepper, dried garlic and cumin, to taste
- Cheddar cheese, grated
- 3 garlic cloves, minced
- 2 tbsp mayonnaise
- Prunes, sliced
- Bacon
- Oil for frying
How to make it.
- Pound the pork slices thin and season with salt, pepper, dried garlic and cumin.
- Mix the grated cheddar with the garlic and mayonnaise.
- Spread the mixture over the pork, add the sliced prunes and roll up each slice.
- Wrap each roll in bacon.
- Fry in a little oil until golden brown all over.
- Bake for 25 minutes at 180°C (350°F), until cooked through.
My tips.
Pound the pork evenly so the rolls cook at the same rate. Secure the rolls with a toothpick if needed.
