Avocado and Tuna Toast

What you'll need.

  • 1 avocado
  • Sun-dried tomatoes
  • Cream cheese (Philadelphia)
  • Capers
  • Red onion
  • Fresh dill
  • 1 egg
  • 1 can of tuna, drained
  • Juice of ½ lime
  • Salt and pepper, to taste
  • Whole grain bread
  • Parmesan cheese
  • Oil for frying

How to make it.

  1. Finely chop the avocado, sun-dried tomatoes, capers, red onion, dill and egg.
  2. Combine with the tuna and cream cheese, season with salt, pepper and lime juice, and mix well.
  3. Heat oil in a pan and fry the whole grain bread until crisp and golden.
  4. Spread the mixture over the toast, grate parmesan on top and serve.

My tips.

Drain the tuna well so the spread stays thick. A little lime juice keeps the avocado green and fresh.

Can I make it ahead?
Make the mixture ahead and chill; fry the bread just before serving.

Can I use fresh tomato?
Sun-dried adds more flavour, but chopped fresh tomato works in a pinch.

Is it filling?
Yes, tuna, avocado and egg make it high in protein and healthy fats.
