Avocado and Tuna Toast

What you'll need.
- 1 avocado
- Sun-dried tomatoes
- Cream cheese (Philadelphia)
- Capers
- Red onion
- Fresh dill
- 1 egg
- 1 can of tuna, drained
- Juice of ½ lime
- Salt and pepper, to taste
- Whole grain bread
- Parmesan cheese
- Oil for frying
How to make it.
- Finely chop the avocado, sun-dried tomatoes, capers, red onion, dill and egg.
- Combine with the tuna and cream cheese, season with salt, pepper and lime juice, and mix well.
- Heat oil in a pan and fry the whole grain bread until crisp and golden.
- Spread the mixture over the toast, grate parmesan on top and serve.

Drain the tuna well so the spread stays thick. A little lime juice keeps the avocado green and fresh.

Can I make it ahead?
Make the mixture ahead and chill; fry the bread just before serving.
Can I use fresh tomato?
Sun-dried adds more flavour, but chopped fresh tomato works in a pinch.
