Air Fryer Turkey Spinach Calzone

This clever calzone uses seasoned ground turkey as the outer layer, folded around pesto, spinach, onion and melted cheese. A crisp breadcrumb coating gives it a golden finish, creating a protein-rich air fryer dinner without pastry. It makes an easy lunch.

What you'll need.

  • 450 g ground turkey
  • 100 g spinach
  • ½ onion, thinly sliced
  • 2 tbsp pesto
  • 100 g cheese, grated
  • 30 g breadcrumbs
  • ½ tsp dried garlic
  • 1 tsp paprika
  • Salt and freshly ground black pepper, to taste
  • 1 tsp oil

How to make it.

  1. Sauté the spinach until wilted, then squeeze out excess moisture.
  2. Season the turkey with dried garlic, paprika, salt and pepper and spread it into an even rectangle on baking paper.
  3. Place pesto, spinach, onion and cheese over one half, then use the paper to fold the turkey over and seal the edges.
  4. Sprinkle with breadcrumbs and air fry at 180°C (350°F) for 16 minutes.
  5. Brush with oil and air fry for 5 minutes more, until golden and cooked through.

My tips.

Squeeze the spinach very dry and seal the turkey edges firmly so the filling stays inside. For a milder variation, replace the pesto with tomato paste.

Can I shape the calzone ahead?
Yes. Keep it covered in the refrigerator for up to 6 hours before cooking.

Can I use ground chicken?
Yes. Ground chicken works with the same filling and timing.

What should I serve with it?
A tomato salad or roasted vegetables make a simple complete meal.
