Air Fryer Tuna and Egg Tortilla

Tuna, egg, green onion, parsley, olives, capers, cherry tomatoes and sun-dried tomatoes make a savoury tortilla filling with plenty of texture. Parmesan, egg yolk and sesame create a golden top in the air fryer, turning pantry staples into a satisfying lunch.
What you'll need.
- 1 can tuna, drained
- 2 eggs, 1 yolk reserved
- 2 green onions, chopped
- 2 tbsp parsley, chopped
- 40 g olives, sliced
- 1 tbsp capers, chopped
- 100 g cherry tomatoes, sliced
- 40 g sun-dried tomatoes, chopped
- 40 g Parmesan, grated
- 2 large tortillas
- 1 tbsp sesame seeds
- Freshly ground black pepper, to taste
How to make it.
- Mix the tuna with one whole egg, one egg white, green onion, parsley, olives, capers, cherry tomatoes, sun-dried tomatoes, Parmesan and pepper.
- Divide the mixture between the tortillas.
- Fold the tortillas around the filling and place seam-side down in the basket.
- Brush the tops with the reserved egg yolk and sprinkle with sesame seeds.
- Air fry at 180°C (350°F) for 10 minutes, until crisp and golden.
My tips.
Drain the tuna and tomatoes well so the tortilla stays crisp. For a milder filling, omit the capers and add sweetcorn.

Can I assemble the tortillas ahead?
Yes. Refrigerate for several hours and brush with yolk just before cooking.
Can I use another cheese?
Cheddar or Gouda can replace the Parmesan.
What should I serve with them?
A simple green salad or sliced cucumber is enough.
