Air Fryer Stuffed Chinese Cabbage with Beef

Chinese cabbage wedges are layered with seasoned ground beef and onion, air fried until tender, then topped with a garlicky yogurt, dill and sriracha sauce. The cabbage softens around the juicy meat while keeping enough structure for a satisfying low-carb dinner.
What you'll need.
- 1 Chinese cabbage
- Kitchen twine
- Salt and freshly ground black pepper, to taste
- 1 tsp marjoram
- 2 tsp paprika, divided
- 450 g ground beef
- ½ tsp summer savory
- 1 onion, chopped
- 2 tbsp dill, chopped
- 2 green onions, chopped
- 2 garlic cloves, minced
- 150 g Greek yogurt
- 1 tbsp sriracha
How to make it.
- Tie the cabbage with kitchen twine and cut it into thick crosswise slices, then season with salt, pepper, marjoram and half the paprika.
- Mix the beef with salt, pepper, summer savory, remaining paprika and chopped onion.
- Spread the beef mixture over the cabbage slices and air fry at 180°C (350°F) for 15 minutes.
- Mix the dill, green onion, garlic, Greek yogurt and sriracha.
- Spoon the sauce over the beef and air fry at 180°C (350°F) for 20 minutes more, then remove the twine.
My tips.
Tie the cabbage firmly so each slice stays together while cooking. For less heat, replace the sriracha with tomato sauce.

Can I assemble the cabbage ahead?
Yes. Refrigerate it for several hours before air frying.
Can I use ground turkey?
Yes. Ground turkey makes a lighter filling.
How do I know the beef is done?
The centre should be fully cooked with no pink remaining.
