Air Fryer Shrimp and Surimi Crab Cakes

What you'll need.

  • 250 g surimi sticks
  • 200 g peeled shrimp
  • Freshly ground black pepper, to taste
  • 1 tsp fish seasoning
  • 1 tbsp cooking oil

How to make it.

  1. Blend the surimi sticks until finely chopped and transfer to a bowl.
  2. Blend the shrimp until roughly minced and combine with the surimi.
  3. Season with pepper and fish seasoning, then shape into small patties.
  4. Brown the patties in a little oil until golden on both sides.
  5. Air fry at 180°C (350°F) for 7 minutes, until cooked through.

My tips.

Chill the shaped patties for 15 minutes if the mixture feels soft. For extra freshness, add lemon zest or chopped dill.

Can I shape the patties ahead?
Yes. Refrigerate them for up to one day before cooking.

Can I skip pan browning?
Yes, but brush with oil and allow a little more air fryer time.

What should I serve with them?
Lemon wedges, salad and a yogurt dip work well.
