Air Fryer Sausage Gouda Breakfast Bake

Grated sausage and Gouda combine with eggs, kefir, green onion, dill and tarragon in a quick air fryer batter. A little flour and baking powder give the bake a tender, sliceable texture, making it ideal for breakfast, brunch or a simple savoury snack.

What you'll need.

  • 250 g cooked sausage, grated
  • 150 g Gouda, grated
  • 2 green onions, chopped
  • 2 tbsp dill, chopped
  • 2 eggs
  • 130 ml kefir
  • 1 tsp baking powder
  • 2 tbsp flour
  • Freshly ground black pepper, to taste
  • ½ tsp dried tarragon
  • 1 tsp cooking oil

How to make it.

  1. Combine the grated sausage, Gouda, green onion and dill.
  2. Whisk the eggs with kefir, baking powder, flour, pepper and tarragon.
  3. Fold the egg mixture into the sausage and cheese.
  4. Oil an air-fryer-safe dish and spread the mixture evenly.
  5. Air fry at 180°C (350°F) for 12 minutes, until set and golden.

My tips.

Use a shallow dish so the centre sets before the top becomes too dark. For a lighter bake, replace some sausage with diced bell pepper.

Good to know.

Can I mix the batter ahead?
Yes. Refrigerate it for several hours before baking.

Can I replace kefir?
Plain yogurt thinned with a little milk works well.

How do I serve the bake?
Slice it warm and add salad or fresh vegetables.
