Air Fryer Salmon with Broccoli and Orange

Salmon, sweet potato, broccoli and cauliflower make a colourful one-basket dinner with citrus, soy, garlic and basil. Fresh orange slices added at the end bring a bright, juicy finish, while the air fryer keeps this nourishing family meal simple.
What you'll need.
- 600 g salmon fillet, skin removed and cut into cubes
- 1 large sweet potato, cut into small cubes
- 200 g broccoli florets
- 200 g cauliflower florets
- 1 orange, sliced
- 3 garlic cloves, minced
- 2 tbsp soy sauce
- 1 tbsp lemon juice
- 1 tsp dried basil
- Freshly ground black pepper, to taste
- 1 tbsp oil
- 2 tbsp water
How to make it.
- Toss the sweet potato cubes with oil and place them in an air-fryer-safe dish with the water.
- Air fry at 170°C (340°F) for 10 minutes, stirring once.
- Add the salmon, broccoli, cauliflower and garlic to the sweet potato.
- Season with lemon juice, soy sauce, black pepper and basil, mix gently, and air fry at 180°C (350°F) for 15 minutes.
- Arrange the orange slices on top and air fry at 180°C (350°F) for 2 minutes more, until fragrant and lightly softened.
My tips.
Cut the sweet potato into small cubes so it becomes tender before the salmon overcooks. For a variation, replace the orange with lemon slices and add a teaspoon of honey to the soy sauce.

Can I prepare the vegetables ahead?
Yes. Cut them a day in advance and refrigerate them in separate covered containers.
Can I use frozen salmon?
Thaw it completely and pat it dry before cubing so the dish does not become watery.
Is another vegetable suitable?
Bell pepper, zucchini, or green beans can replace either the broccoli or cauliflower.
