Air Fryer Pork Neck with Potatoes and Mushrooms

Tender pork neck, golden potatoes, onions and mushrooms cook together with coriander and paprika for a deeply savoury air fryer dinner. Staggering the ingredients gives the potatoes a head start while the rich pork juices season the whole dish. Serve it warm.
What you'll need.
- 700 g pork neck, cut into cubes
- 2 onions, chopped
- 1 tsp ground coriander
- 1 tsp paprika
- Salt and freshly ground black pepper, to taste
- 1 tbsp olive oil
- 600 g potatoes, sliced
- 1 tbsp cooking oil
- 250 g button mushrooms, sliced
How to make it.
- Season the pork and onions with coriander, paprika, salt, pepper and olive oil.
- Toss the potatoes with cooking oil, salt and pepper and air fry at 180°C (350°F) for 12 minutes.
- Add the seasoned pork and sliced mushrooms to the potatoes and stir well.
- Air fry at 180°C (350°F) for 15 minutes.
- Stir again and cook for 10 minutes more, until the pork is tender and the potatoes are golden.
My tips.
Cut the pork and potatoes into similar bite-size pieces for even cooking. If the basket is small, cook in two batches to avoid steaming.

Can I season the pork ahead?
Yes. Refrigerate the seasoned pork for up to 12 hours.
Can I use another mushroom?
Cremini or oyster mushrooms are good substitutes.
