Air Fryer Marrow Bone Toasts with Herbs

Roasted marrow becomes rich and silky in only ten minutes, then spreads over crisp whole-grain toast with red onion, green onion, parsley and basil. Lemon, olive oil and spicy paprika cut through the richness for a bold starter made with very few ingredients.

Roasted marrow becomes rich and silky in only ten minutes, then spreads over crisp whole-grain toast with red onion, green onion, parsley and basil. Lemon, olive oil and spicy paprika cut through the richness for a bold starter made with very few ingredients.

What you'll need.

  • 4 split marrow bones
  • Salt and freshly ground black pepper, to taste
  • 1 tsp cooking oil
  • ½ tsp dried rosemary
  • ½ tsp dried basil
  • ½ red onion, finely chopped
  • 2 green onions, chopped
  • 2 tbsp parsley, chopped
  • 1 tbsp fresh basil, sliced
  • 1 tbsp lemon juice
  • ½ tsp hot paprika
  • 1 tbsp olive oil
  • 4 slices whole-grain bread

How to make it.

  1. Season the marrow bones with salt, pepper, cooking oil, rosemary and dried basil.
  2. Air fry at 180°C (350°F) for 10 minutes, until the marrow is soft and bubbling.
  3. Mix the red onion, green onion, parsley, fresh basil, lemon juice, hot paprika and olive oil.
  4. Toast the whole-grain bread until crisp.
  5. Scoop the marrow onto the toast, top with the herb mixture and serve immediately.

My tips.

Arrange split bones cut-side up so the marrow stays in place. Add extra lemon if you prefer a brighter, less rich finish.

Good to know.

Can I prepare the herb topping ahead?
Yes. Mix it a few hours ahead and refrigerate.

How do I know the marrow is ready?
It should look glossy, soft and pull easily from the bone.

Can I use sourdough bread?
Yes. Any sturdy bread that toasts well is suitable.
