Air Fryer Marrow Bone Toasts with Herbs

Roasted marrow becomes rich and silky in only ten minutes, then spreads over crisp whole-grain toast with red onion, green onion, parsley and basil. Lemon, olive oil and spicy paprika cut through the richness for a bold starter made with very few ingredients.
What you'll need.
- 4 split marrow bones
- Salt and freshly ground black pepper, to taste
- 1 tsp cooking oil
- ½ tsp dried rosemary
- ½ tsp dried basil
- ½ red onion, finely chopped
- 2 green onions, chopped
- 2 tbsp parsley, chopped
- 1 tbsp fresh basil, sliced
- 1 tbsp lemon juice
- ½ tsp hot paprika
- 1 tbsp olive oil
- 4 slices whole-grain bread
How to make it.
- Season the marrow bones with salt, pepper, cooking oil, rosemary and dried basil.
- Air fry at 180°C (350°F) for 10 minutes, until the marrow is soft and bubbling.
- Mix the red onion, green onion, parsley, fresh basil, lemon juice, hot paprika and olive oil.
- Toast the whole-grain bread until crisp.
- Scoop the marrow onto the toast, top with the herb mixture and serve immediately.
My tips.
Arrange split bones cut-side up so the marrow stays in place. Add extra lemon if you prefer a brighter, less rich finish.

Can I prepare the herb topping ahead?
Yes. Mix it a few hours ahead and refrigerate.
How do I know the marrow is ready?
It should look glossy, soft and pull easily from the bone.
Can I use sourdough bread?
Yes. Any sturdy bread that toasts well is suitable.
