Air Fryer Ham and Gouda Pita Rolls

Grated ham and Gouda, fresh dill, garlic and sour cream make a rich filling for crisp little pita rolls. A brush of egg yolk and sesame gives them a beautiful golden top, while the air fryer turns them into an easy snack in only eight minutes.
What you'll need.
- 2 large lavash or thin pita sheets
- 180 g ham, grated
- 160 g Gouda, grated
- 2 tbsp dill, chopped
- 2 garlic cloves, minced
- 2 tbsp sour cream
- Freshly ground mixed pepper, to taste
- 1 egg yolk, beaten
- 1 tbsp sesame seeds
How to make it.
- Mix the grated ham, Gouda, dill, garlic, sour cream and mixed pepper.
- Spread the filling evenly over the lavash, leaving a small border around the edges.
- Roll each sheet tightly and cut it into short, even pieces.
- Arrange the rolls seam-side down, then brush the tops with egg yolk and sprinkle with sesame seeds.
- Air fry at 180°C (350°F) for 8 minutes, until crisp, golden and hot in the centre.
My tips.
Grate both the ham and cheese finely so the rolls stay tight and the filling melts evenly. For a sharper variation, replace half the Gouda with mature Cheddar.

Can I assemble the rolls ahead?
Yes. Refrigerate them for several hours and brush with egg yolk just before air frying.
Can I use tortillas?
Soft flour tortillas work well, although the finished rolls may be a little thicker.
What can I serve with them?
Try mustard, tomato dip, or a crunchy cucumber salad alongside the warm rolls.
