Air Fryer Eggplant with Ground Beef

Eggplant slices become the base for seasoned ground beef, tomato, onion, creamy mayonnaise and melting Gouda. The air fryer cooks everything together into a rich, comforting dinner with tender vegetables and a golden cheese top. Serve it with a crisp salad.
What you'll need.
- 2 medium eggplants, sliced
- 450 g ground beef
- 1 onion, chopped
- 1 tomato, sliced
- 120 g Gouda, sliced or grated
- 2 tbsp mayonnaise
- ½ tsp dried garlic
- 1 tsp paprika
- Salt and freshly ground black pepper, to taste
How to make it.
- Arrange the eggplant slices in an air-fryer-safe dish.
- Mix the ground beef with onion, dried garlic, paprika, salt and pepper.
- Spread the beef mixture evenly over the eggplant.
- Top with tomato slices, small spoonfuls of mayonnaise and Gouda.
- Air fry at 180°C (350°F) for 15 minutes, until the beef is cooked and the cheese is golden.
My tips.
Keep the beef layer fairly thin so it cooks through before the eggplant becomes too soft. For a lighter variation, use ground turkey and Greek yogurt.

Can I assemble the dish ahead?
Yes. Cover and refrigerate it for several hours, then add a few minutes to the cooking time.
Can I use zucchini?
Yes. Thick zucchini slices make a good substitute for eggplant.
What should I serve with it?
