Air Fryer Corn Ham and Parmesan Sandwich

Sweet corn, savoury ham and Parmesan make a creamy, golden sandwich with plenty of comforting flavour. A little mayonnaise, ketchup and mustard binds the filling, while the air fryer crisps the buttered bread in only six minutes. It is great for lunch.
What you'll need.
- 4 slices sandwich bread
- 120 g ham, chopped
- 100 g sweetcorn, drained
- 50 g Parmesan, grated
- 1 tbsp mayonnaise
- 1 tsp ketchup
- 1 tsp mustard
- 1 tbsp softened butter
How to make it.
- Mix the corn, ham, Parmesan, mayonnaise, ketchup and mustard.
- Divide the filling between two slices of bread and top with the remaining bread.
- Spread the outside of each sandwich lightly with butter.
- Place the sandwiches in the air fryer basket and press gently.
- Air fry at 180°C (350°F) for 6 minutes, turning halfway, until crisp and the cheese has melted.
My tips.
Drain the corn thoroughly so the filling stays creamy without making the bread soggy. For a vegetarian variation, replace the ham with chopped roasted pepper.

Can I assemble the sandwiches ahead?
Yes. Refrigerate them for several hours and butter the outside just before cooking.
Can I use another cheese?
Cheddar or Gouda will melt more softly and work very well.
What can I serve with them?
Tomato soup, cucumber salad, or raw vegetable sticks make an easy meal.
