Air Fryer Corn Ham and Cheese Tortilla

Sweetcorn roasts with mozzarella and Parmesan in the air fryer, then fills a soft tortilla with cream cheese, ham, lettuce, tomato and cilantro. The warm, cheesy corn contrasts with the fresh vegetables, creating a quick folded lunch with plenty of texture.
What you'll need.
- 1 can sweetcorn, drained
- 1 tsp cooking oil
- 100 g mozzarella, grated
- 40 g Parmesan, grated
- 4 large tortillas
- 100 g cream cheese
- 150 g ham, sliced
- 4 lettuce leaves
- 2 tomatoes, sliced
- 2 tbsp cilantro
How to make it.
- Drain the corn thoroughly and spread it in an air-fryer-safe dish brushed with oil.
- Top with mozzarella and Parmesan.
- Air fry at 180°C (350°F) for 15 minutes, until hot and golden.
- Spread cream cheese over the tortillas and add ham, lettuce, tomatoes and cilantro.
- Spoon in the cheesy corn, fold the tortillas and serve while warm.
My tips.
Drain the corn very well so it roasts instead of steaming. For a vegetarian version, replace the ham with roasted peppers.

Can I prepare the filling ahead?
Yes. Refrigerate the cooked corn and reheat before assembling.
Can I use another cheese?
Cheddar or Gouda can replace the mozzarella.
Can I toast the folded tortilla?
