Air Fryer Chicken Pepper Fajita Mix

Chicken breast, sweet peppers and onions cook together with paprika, basil, cumin and garlic for an easy fajita-style dinner. The air fryer brings out caramelized edges while keeping the chicken juicy, all with very little cleanup. Serve with warm tortillas.
What you'll need.
- 2 chicken breasts (about 700 g), sliced
- 2 bell peppers, sliced
- 2 onions, sliced
- 1 tsp chicken seasoning
- 1 tsp paprika
- ½ tsp dried garlic
- ½ tsp dried basil
- ½ tsp ground cumin
- Salt and freshly ground black pepper, to taste
- 1 tbsp olive oil
How to make it.
- Slice the chicken, peppers and onions into similar strips.
- Combine them with chicken seasoning, paprika, garlic, basil, cumin, salt and pepper.
- Drizzle with olive oil and toss until evenly coated.
- Spread the mixture in the basket, cooking in two batches if needed.
- Air fry at 180°C (350°F) for 20 minutes, stirring twice, until the chicken is cooked and the vegetables are lightly browned.
My tips.
Keep the basket loosely filled so the chicken and vegetables roast instead of steaming. For a spicier variation, add chilli powder or sliced jalapeño.

Can I slice everything ahead?
Yes. Refrigerate the prepared chicken and vegetables separately for up to one day.
Can I use chicken thighs?
Boneless thighs are an excellent substitute and stay especially juicy.
How should I serve the fajita mix?
Fill warm tortillas or serve it over rice with avocado and yogurt.
