Air Fryer Chicken and Cheese Cutlets

Chopped chicken, eggs, cheese and fresh herbs form tender cutlets with a golden air fryer finish. They are easy to shape, full of familiar flavours and served with a creamy mustard dip, making a practical family meal that feels generous and comforting.
What you'll need.
For the cutlets
- 2 chicken fillets (about 600 g), finely diced
- 3 large eggs
- 100 g cheese, grated
- 2 tbsp flour
- 1 tbsp mayonnaise
- 2 tbsp dill, chopped
- 2 green onions, chopped
- ½ tsp dried garlic
- Salt and freshly ground black pepper, to taste
For the dip
- 2 tbsp sour cream
- 1 tbsp mayonnaise
- 1 tsp ketchup
- 1 tsp mustard
How to make it.
- Dice the chicken into very small pieces and place it in a mixing bowl.
- Add the eggs, cheese, flour, mayonnaise, dill, green onions, dried garlic, salt and pepper and mix well.
- Shape the mixture into small flat cutlets with damp hands and arrange them on a suitable liner.
- Air fry at 180°C (350°F) for 15 minutes, turning carefully halfway, until golden and cooked through.
- Mix the sour cream, mayonnaise, ketchup and mustard and serve with the warm cutlets.
My tips.
Dice the chicken finely and chill a soft mixture for ten minutes so the cutlets are easier to shape. For a lighter variation, replace the mayonnaise in the cutlets and dip with Greek yogurt.

Can I shape the cutlets ahead?
Yes. Keep them covered in the refrigerator for up to 6 hours before air frying.
Can I use ground chicken?
Ground chicken works, although the finished texture will be smoother and less chunky.
What should I serve with them?
Mashed potatoes, cucumber salad, or roasted vegetables are all good companions.
