Air Fryer Cauliflower with Ground Pork

Roasted cauliflower becomes a hearty dinner when topped with seasoned ground pork, juicy tomato, fresh herbs and melted cheese. The air fryer cooks the vegetable first, then brings the whole dish together, creating a cosy meal with very little fuss.
What you'll need.
- 1 medium cauliflower, cut into small florets
- 500 g ground pork
- 1 tomato, diced
- 2 green onions, chopped
- 2 tbsp dill, chopped
- 2 tbsp parsley, chopped
- 120 g cheese, grated
- 1 tbsp olive oil
- Salt and freshly ground black pepper, to taste
How to make it.
- Toss the cauliflower with olive oil, salt and pepper and spread it in an air-fryer-safe dish.
- Air fry at 180°C (350°F) for 7 minutes, until the edges begin to colour.
- Mix the ground pork with the diced tomato, green onions, dill, parsley, salt and pepper.
- Spoon the pork mixture evenly over the cauliflower and top with the grated cheese.
- Air fry at 170°C (340°F) for 15 minutes, until the pork is cooked through and the cheese is golden.
My tips.
Break the ground pork into a thin, even layer so it cooks through at the same pace as the cauliflower. For a lighter variation, use ground turkey or chicken instead.

Can I prepare the dish ahead?
Assemble it several hours in advance, refrigerate it covered, and add a few minutes to the cooking time.
Can I use frozen cauliflower?
Thaw and dry it thoroughly first so the finished dish does not become watery.
What should I serve with it?
A green salad or steamed vegetables are enough, although crusty bread is lovely with the juices.
