Air Fryer Beef Kebab Wraps with Two Sauces

What you'll need.

  • 450 g ground beef
  • ½ tsp dried garlic
  • ½ tsp ground coriander
  • ½ tsp ground cumin
  • ½ tsp blue fenugreek
  • Salt and freshly ground black pepper, to taste
  • 1 red bell pepper
  • 150 g cherry tomatoes
  • ½ tsp dried basil
  • 1 tbsp cooking oil
  • 1 tbsp yogurt
  • 1 tbsp sour cream
  • 1 pickled cucumber, chopped
  • 1 garlic clove, minced
  • 1 tbsp pickle brine
  • 150 g cabbage, sliced
  • ½ red onion, sliced
  • 1 tbsp sriracha
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 4 whole-grain tortillas

How to make it.

  1. Season the beef with garlic, coriander, cumin, blue fenugreek, salt and pepper, spread it thinly on parchment and roll firmly.
  2. Place the beef roll, bell pepper and cherry tomatoes in the basket, season the vegetables with basil and oil, and air fry at 185°C (360°F) for 15 minutes.
  3. Mix the yogurt, sour cream, pickle, garlic and brine for the white sauce.
  4. Blend the peeled roasted pepper and tomatoes with sriracha, lemon juice and olive oil for the red sauce.
  5. Fill the tortillas with both sauces, sliced beef, cabbage and red onion, roll tightly and toast briefly in a dry pan.

My tips.

Keep the beef layer thin before rolling so the centre cooks completely. For a milder red sauce, replace part of the sriracha with roasted tomato.

Can I shape the beef roll ahead?
Yes. Refrigerate it wrapped in parchment for several hours.

What is blue fenugreek?
It is an aromatic spice also called utskho suneli; regular fenugreek may be used sparingly.

Can I skip the final pan toasting?
Yes. The wraps will be softer but still delicious.
