Air Fryer Beef Kebab Wraps

Seasoned ground beef, sweet peppers and onion cook as a thin layer in the air fryer, then become a generous whole-grain wrap with tomato, pickles and herbs. A cool yogurt sauce with sriracha, lemon and Worcestershire brings creamy heat to every bite.
What you'll need.
- 400 g ground beef
- 1 yellow bell pepper, finely chopped
- 1 red bell pepper, finely chopped
- 1 onion, finely chopped
- ½ tsp ground cumin
- ½ tsp dried oregano
- ½ tsp smoked paprika
- Salt and freshly ground black pepper, to taste
- 1 tbsp oil
- 1 tomato, sliced
- ½ red onion, sliced
- 1 pickled cucumber, sliced
- 3 tbsp yogurt
- 1 tbsp sriracha
- 1 tsp lemon juice
- 1 tbsp Worcestershire sauce
- 4 whole-grain tortillas
- Parsley, to finish
How to make it.
- Mix the beef with the chopped peppers, onion, cumin, oregano, smoked paprika, salt and pepper.
- Spread the mixture in a thin, even layer on parchment and brush lightly with oil.
- Air fry at 180°C (350°F) for 15 minutes, until the beef is cooked through.
- Mix the yogurt, sriracha, lemon juice and Worcestershire sauce, then slice the tomato, red onion and pickle.
- Fill each tortilla with sauce, beef, salad vegetables and parsley, then roll tightly.
My tips.
Spread the beef evenly so every part cooks at the same rate. For less heat, reduce the sriracha and add another spoonful of yogurt.

Can I prepare the beef mixture ahead?
Yes. Refrigerate it for up to one day and spread it on parchment just before cooking.
Can I use ground turkey?
Yes. Ground turkey works well and may cook a little faster.
